Our restaurant specializes in "En Papillotte" cooking, which has been our house specialty for over 20 years
En Papillotte is a traditional French technique of baking in parchment paper.  It's prepared with julienned vegetables, fresh herbs, white wine and a selection of fresh seafood.   Then it's wrapped in parchment paper and baked to prefection, sealing in all the natural juices and favors.
